Something amazing has been growing amongst the lovingly tended flowers and shrubs in the garden courtyard at our St Catherine’s nursing home in Newcastle.
As harvest time approaches, one of our residents has already shared the benefits of an early crop of courgettes with home manager, Anne.
A prize winning standard courgette – grown by our green-fingered resident and talented cook, Helen – was the talk of St Catherine’s when it was picked and carefully transported to the manager’s office.
“I’ve never seen such a perfectly green and healthy looking courgette!” said Anne when the vibrant veggie was donated to her. “I’ll have to make sure to cook something really special with it,” she added.
And that’s exactly what she did. The secret ingredient was added to Anne’s own ratatouille recipe and photos taken of the delicious meal to share with Helen. Anne’s culinary expertise couldn’t match the perfection of Helen’s banter, however. When shown the photo, Helen simply responded with a wry smile and a mischievous: “that’s not ratatouille, that’s soup!”
